Low Carb with Attitude: Grilled Steak & Setas Salad
The last few weeks have involved fried food of all nations and lots of ice cream. It was fun, but I am ready to go ” healthier”. I am not a hard core dieter so I go for more grilled meats and adding more fresh stuff to the menu.
I love steak because it feels like a real meal and a little goes a long way. You can make a great salad with half of the amount of steak and be really satisfied. Adding the setas (mushrooms) makes it feel special and adds nutrition.
Step 1: I started with marinating about 8 mushrooms in 1 tbsp olive oil, 1 tsp olive oil, 1 tsp soy sauce, 1 garlic clove and any herbs i found in the garden (basil, chives and a bay leaves). Use whatever mushrooms you are into. I used shitakes but this works great with any type of mushrooms.
Step 2: I then tossed the 2 steaks in a tbsp olive oil, 1 tsp balsamic vinegar, 1 tsp salt. 1/2 tsp pepper and 1 tsp garlic powder. I used rib eye thinly sliced so that the steaks cook fast.
Step 3: Grill mushrooms for about 5 minutes and steaks for about 10 minutes (flip over at least once 1/2 way thru). Leave herbs and marinade for mushrooms in a bowl. Put mushrooms back in their marinade after cooked and add another 2 tbsp of olive oil and 1 tbsp of balsamic. Cut steak in strips and add to the marinade.
Step 4: Chop about 5 cups of romaine, 1 cucumber and toss in marinade with steak and mushrooms. Serves about 4.
Not exactly dietetic but a nice way to have a healthy but tasty dinner!

I love steak and mashed potatoes but I want to eat healthier so this alternative is perfect. I think I can give this to my hubby for dinner one nite and he won’t even miss the starch! Okay, maybe he won’t. LOL

Mushrooms, steak, salad! Yum! I cut back by using yams as a starch and that way I do not compromise flavor.

I am such a salad eater! I can eat it for breakfast, lunch and dinner. Yours looks so sabroso with the fresh herds, that must give it the extra punch since there is nothing like fresh herbs! Sighhhh I can’t wait till I have a garden.
